Today we’d like to introduce you to Alyssa Seiber
Hi Alyssa, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I was placed randomly in the bakery department for a grocery store when I was 18. There every clerk has to learn how to write “Happy Birthday” on cakes in case a customer asks for a special message from the cake case. They were all surprised that I had no shakiness on my first try and it came very naturally. From there our decorator at the time needed to use vacation days and instead of bringing someone else on for 3 weeks, they had me do my best and figure it out. It all was so easy and everything came out perfectly fine. I realized I loved this. I started practicing more and more and followed different trends and essentially taught myself all the techniques from trial and error. I started playing around with fondant at home because this bakery did not use it, but I definitely wanted to learn how to do fancier things. From there I would do cake orders for family and friends and quickly started earning money from recommendations. I grew my business in Orange County. Mainly Anaheim and surrounding areas. I had some great opportunities doing shows and events, and even working with large businesses ( I did a lot of deliveries to people celebrating at a certain “Happiest Place” ahem*)
I was very happy with the way my business was growing and unfortunately my husband was in an accident that changed our lives forever. We had to move out of state and I made the decision to forfeit my business. I was devastated. We moved to Arizona where I worked at a handful of bakeries but it never felt the same. Thankfully 8 years later I have moved back to my home state now residing in Long Beach where I have decided that I’m not done. I’ve started over and resumed my baking journey working hard to regain the amazing experience I had the first time around. I now have 20 years experience in this industry and can’t wait to continue.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The biggest struggle for me, is times are always changing. There’s always a new trend, new ideas. I love the challenge but sometimes keeping up with what people see on the internet and having to learn new techniques quickly can be a hurdle. That and extremely long hours. I once worked on a cake for 36 straight hours.

I am a cake a sweets artist. I specialize mainly in celebration cakes. Everything from birthdays to weddings to expos and competitions. The thing I’m most proud of is that I’m completely self taught. No fancy culinary school just all practice and a long resume of experience.
There are so many talented people in this industry that it’s hard to answer what sets me apart, but I do know that I’m so passionate about my craft and I strive to go above and beyond to make someone’s special day even that much more special.
