Today we’d like to introduce you to John Gibson.

Hi John, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
After retiring from Real Estate and Financial Industries in 2014, I decided to go back to school to get my culinary arts degree. In 2024 I graduated from The Institute of Culinary Education in Los Angeles.

What began as a friendly share of my muffins to friends at Equinox in 2024 turned into a fortuitous encounter with the legendary Magic Johnson. He was intrigued that I baked muffins with olive oil as he had a fondness for it from his vacations to Italy. I gave him a chocolate chip muffin which he loved.

When I saw him after the weekend he boasted how moist and tender the textures were and the flavor was delicious. Most importantly he didn’t get the usual heavy feeling after eating a muffin. Subsequently he ordered a dozen sugar free apple spice muffins and to this day orders for his office employees who are healthy oriented. We took a selfie with my muffins and I posted it to instagram that led to 25 orders that week. That’s what I call “The Magic Effect!”. This is how my business started that led me eventually to place 3rd with my carrot cake at the 2025 LA County Fair muffin category.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Being a first time entrepreneur has its challenges for anyone. Setting up my business getting the proper licensing and certifications was the easy part. The challenge and fun part was perfecting my recipes that exceeded people’s expectations took a lot of trial and error. Muffins are sold everywhere and there’s many ways to make them. Taking something ordinary and making it extraordinary is the joy I get being a culinary artist.

As much I would love my muffins to be the best tasting to everyone, it’s an unrealistic expectation to have. We all have different tastes and what we prefer. Of course I’ve tasted every recipe to ensure quality and flavor. I’ve received overwhelmingly positive feedback with a few suggestions to improve. Being a successful food entrepreneur is about evolving and consistency in your products, creating excitement through social media, networking and collaboration and innovation/creativity that sets you apart from others. I’m looking to improve on all these aspects.

Tender Crumb Creations was born in a place you wouldn’t expect—a local gym. What started as a healthier alternative to the usual sugar-laden snacks quickly became a passion: creating olive oil–based muffins and cakes that are as nourishing as they are indulgent. Unlike traditional bakeries, Tender Crumb Creations blends the worlds of wellness and flavor. Every recipe highlights the richness of olive oil, giving each bite a tender crumb, subtle complexity, and a touch of Mediterranean tradition.

What sets me apart? My story begins with movement and health, and carries into every muffin. I’m not just baking—I’m fueling lifestyles. Each creation bridges the gap between wholesome and crave-worthy, designed for people who care about what goes into their bodies without giving up joy. From the gym to the kitchen, Tender Crumb Creations is redefining what a sweet treat can be.

Where do you see things going in the next 5-10 years?
In 5–10 years, I see my business evolving from its humble gym beginnings into a recognized brand in the healthy-gourmet baking space. My olive oil muffins will be known not just as baked goods, but as a lifestyle choice—treats that balance wellness, flavor, and creativity.
• Retail Presence: Partnerships with gyms, coffee shops, and boutique grocers who value wellness-oriented food.
• E-Commerce Growth: Shipping nationwide, with signature muffin boxes and olive-oil cake gift packages that make their way into homes across the country.
• Product Line Expansion: Beyond muffins, branching into snackable mini loaves, seasonal specialties, and even branded products like Tender Crumb baking kits.
• Community & Culture: Hosting wellness-inspired baking classes, pop-ups, and collaborations with fitness trainers, chefs, and local artists.
• Brand Recognition: Tender Crumb Creations becoming synonymous with “wholesome indulgence”—a brand people trust for both quality and creativity.
