Today we’d like to introduce you to Heather Sperling.
Hi Heather, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
Bar Siesta is a home for Spanish culture and cuisine in the Silver Lake neighborhood of Los Angeles. A collaboration between Heather Sperling, of the city’s beloved farmers market-driven Botanica, and Lucía Flors and Carlos Leiva, the founders of Siesta Co, a renowned line of Spanish conservas and curated artisanal products, Bar Siesta is a destination for Spanish hospitality and gastronomy from day through night.
By day, the 1,300-square foot Bar Siesta is the city’s only Spanish gourmet shop, with a menu of conservas, sandwiches and Spanish snacks. By night, it’s a 50-seat indoor/outdoor destination for Spanish wine, beer, sherry, vermouth, and farmers market tapas, with a warm and boisterous setting reminiscent of the distinctly Spanish manner of conviviality.
The concept has been years in the making. Even before launching Siesta Co., Flors and Leiva’s dreamed of opening a Spanish bar. The partnership with Sperling came naturally after meeting through mutual friends in Los Angeles. Sperling, a lifelong admirer of Spanish culture and cuisine via time living in Barcelona and years traveling extensively throughout the country, embraced Siesta Co., incorporating its products into Botanica’s offerings and creating a “tinned fish happy hour.” Upon hearing about the original bar concept, Heather’s shared enthusiasm for Spanish gastronomy led to the collaboration that made Bar Siesta a reality.
In the kitchen, Chef Keith Phillips (formerly of LA’s Rustic Canyon, Botanica and Bub & Grandma’s and Chicago’s Roister) oversees a menu of Spanish tapas, both classic and creative, rooted in Spanish culinary tradition and prepared with exceptional Californian ingredients. The beverage program, led by Beverage Director Pierluc Dallaire (also of Botanica), showcases a thoughtfully curated selection of natural wines, vermouth and sherry.

We are a Spanish-Californian tapas bar serving farmers market tapas and Spanish conservas alongside Spanish vermouth, sherry, beer and wine. We aim to be a taste of Spain in Silver Lake!
