Today we’d like to introduce you to Theresa & Cathy Rosczewski.
Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
My daughter, Theresa,, had been bartending and managing bar restaurants for years and wanted her own place, she saw the Long Beach location and asked me if I would go in with her on it. I was going to be retiring in a few years and wanted a way to have extra income, I had no experience in the restaurant business at the time. We needed a little financial help so asked a friend who has other businesses but always interested in new opportunities if he was interested in partnering with us and he said yes. We started on a wing and a prayer! Theresa is the GM running daily operations and I handle payroll, HR and marketing. After being a bartender/server for years Theresa had great experience with training staff and setting them up for success. We were challenged with the kitchen side at first, going thru several Chef’s before we found our current Chef and his team. Music has always been a love of ours so we wanted to bring in live entertainment. Being an Irish Pub doesn’t mean you just have Irish music. When I visited Ireland they were listening and dancing to classic rock. We have a variety of musical styles but probably more Classic Rock than other genres. Our local crowd and tourist love our live entertainment. Irish Pubs are social houses where everyone young and old come and meet friends, enjoy music, sports, good food and drink and make new friends. That is what we wanted for our place.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It was rough in the beginning, we didn’t have a lot of money so we needed to get opened ASAP. We bought the assets of a previous restaurant that had the space. We had 3 days where friends came and helped us to deep clean, paint, check inventory, build some benches to be ready to open. We had hired some of the staff from previous restaurant thinking that would help get us going. It did, but not enough, my husband and myself ended up waiting tables, doing dishes and whatever else was needed. It was a success but very stressful at the time. We had to change the Chef a few times over the years to get the kitchen running at best performance. Things break, drains clog up so we fix and we keep going.
Alright, so let’s switch gears a bit and talk business. What should we know?
We are a waterfront Irish Pub/Restaurant, we have full menu, breakfast, lunch and dinner. We have 14 TV screens for sports and we are known for our live entertainment. We are know as a fun waterfront pub. We are not typical corporate style restaurant, we like to be more fun environment. A Social place where people can listen to good music, meet new friends have great food and drink cheer on their sports team or play a little pool. We are on the water in Long Beach, we are known for our fish & chips and our varied menu (not just “pub food”). Our food is fresh and house made.
Is there anything else you’d like to share with our readers?
We are community oriented, in October we have breast cancer fundraiser where we have a silent auction, raffle with great give aways like surfboards, skateboards, etc. All funds go to the Breast Cancer Research Foundation. Being family oriented, we have supported many local sports teams.
We have in-house catering for parties, like corporate happy hours, wakes/memorials, wedding parties, birthdays, etc.
