Today we’d like to introduce you to Bryan Carrillo

Hi Bryan , please kick things off for us with an introduction to yourself and your story.
After 10 years of experience working for other big restaurants out through L.A. I finally had it figured out. It all started on 70th & Compton at my mom’s house in front of her garage. We had a pop up after Covid and next thing you know FatboysBbq was born. I wasn’t sure if we were going to make it this far but my passion for food has always been real. My mother who believed in me was the reason why we’re here today talking about Fatboysbbq. I was given the opportunity to buy a food truck a year later after our pop ups. I was able to share my food around socal. I bring out BARBECUE like no one in SoCal has thought of. That’s what makes me unique my sandwiches are simply one of a kind. By being consistent and putting in the work I’ve made it this far and my vision for FatBoysBBQ isn’t gonna stop with our food truck.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Work is stressful especially when you’re trying to run a business. Owning a food truck hasn’t been easy. Being away from my wife & kids 5 days even 6 days out of the week must be one of the hardest struggles in life. I often find that I have to sacrifice my time with my family just to be at work and honestly it isn’t easy. I know that at the end it’ll be worth it for a better future for my family and really that is what keeps me going.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
In L.A. there are a few things you’ll easily find in any neighborhood: Hotdogs, Burgers, and Tacos. The supply of these types of food are simply never ending. My Business “Fat Boys BBQ” started because I wanted to do something different. Besides making everything we sell, with the exception of the bread, I try to be as hands on as possible throughout the entire experience which is why my team consists of only close friends and family. A few of our customers favorites start with our Pull Pork Sandwiches, made with hand buttered tender bread and Pull Pork that is smoked for 20 hours. Additionally, it has hand sliced and seasoned onion rings and coleslaw with our signature and personally homemade BBQ sauce. Our brisket, similar to our Pull Pork, is smoked for 20 hours. Lastly, our Loaded Waffle Fries contain cheese sauce, chives, Pull Pork, and our BBQ sauce. Overall, all this Smoked BBQ will have you coming back for more. We move around quite a lot and do all sorts of events from personal caterings to large public events.
