HATCH

The three co-founders of HATCH are: Akarad Tachavatcharapa, Nara Latip, and Daniel Shemtob. By combining their Singaporean, Thai, Indonesian, and Jewish backgrounds, they frequently reference ingredients personal to their cultures to create playful dishes. The restaurant is an homage to the diverse background of people coming together to build something special.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
The cross-cultural approach was not well received when the restaurant first opened. It took some time for people to catch on our take on traditional Japanese cooking fused with bold international flavors.

As you know, we’re big fans of HATCH. For our readers who might not be as familiar what can you tell them about the brand?
HATCH is a modern Japanese restaurant that celebrates yakitori, creative plates and curated drinks. We value quality by using only premium ingredients, such as locally sourced organic chicken. Our beverage program includes handcrafted cocktails, a wide array of sakes and rare Japanese whiskies.
