Today we’d like to introduce you to Jennifer & Rick Carranza.

Hi Jennifer & Rick, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
We previously owned a keto store and to bring in more business, we had the idea to make keto-friendly mini pancakes. We started this back in March 2022. We loved it so much that we wanted to make the traditional mini pancakes and start attending pop-ups. Our first official one was Sept 2022 and since then we’ve been popping up in different cities and we’ve been hired for catering.

What turned into something just for fun became our little side business.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Honestly, since we started it has been smooth and easygoing.

Alright, so let’s switch gears a bit and talk business. What should we know?
We currently offer mini pancakes (for now). We’re open for catering for all occasions. And we occasionally attend all keto or all vegan pop-ups (these are also available for caterings). We have been told by many customers that our mini pancakes can be eaten without any toppings. They’re not dry and they are super fluffy. We are known more for taste than aesthetics.

Is there a quality that you most attribute to your success?
We often create flavors you don’t find anywhere. We love to get creative to match a theme, season and/or event we attend.
