

Today we’d like to introduce you to Viktoria Tabak.
Viktoria, please share your story with us. How did you get to where you are today?
I grew up loving to cook and entertain. I landed in culinary school in Florence, Italy shortly after high school, then followed up my education under a French chef in Laguna Beach. After working behind the scenes on restaurant lines, I really found myself craving for guest contact. I started catering around 2011 and fell in love with it. Working with my customers to put together menus for their special events and even custom meals for their day to day lives still gives me the opportunity to cook, but also the option to talk about my food and watch everyone indulge!
We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
I went to high school in Huntington Beach, and was living there after graduation. I was able to build up a nice clientele throughout Orange County, but in 2013, my husband and I moved fairly quickly back to his hometown of Valencia. It was definitely difficult trying to rebuild my business after a move, and finding repeat clients as well, since the demographic in Valencia is quite different than that of Orange County.
So, as you know, we’re impressed with VLT Catering – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
VLT Catering offers private chef services (meal prep to intimate wine and food dinner pairings), catering for events like birthday parties, cocktail parties, brunches, bridal and baby showers, etc., as well as bartending services. I personally work with my guests start to finish to ensure every detail is taken care of and my guests are able to sit back and enjoy their social event.
So, what’s next? Any big plans?
I would love to eventually get to the point of renting a commercial kitchen space. I started this business cooking out of our small one bedroom apartment, and though that’s not the case now, I would still love to get to the point of having a large prep kitchen to hold cooking classes in, as well as better equip myself to cook for larger scale events.
