Today we’d like to introduce you to Justin Prietto.
Justin, please share your story with us. How did you get to where you are today?
Our taco cart company started about eight years ago as a subdivision of our parent company Huntington Catering, established in 2007. Since then, we have grown a bit and rebranded to Kon-Tiki Taco.
The idea comes from a great book I read that explains a historic reenactment of a legendary voyage across the Pacific to Tahiti by ancient Peruvians. This tale was particularly interesting to me because my grandfather is from Peru. Branding is a lot of fun for me, so I thought it would be cool to build an LA style taco catering company with Polynesian and Peruvian flavors. So there we have it, Kon-Tiki Taco.
Taco Cart Catering is a unique application in the events market place. Smaller than food truck, we are able to get into many spaces that they can’t. Less expensive than full-service catering, we are able to suit many cost-effective wedding budgets. It’s been a great service for our customer over the years.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Small Business in America, especially California, is never a smooth road. Struggles along the way include traffic, flat tires, slipping, 100+ degree weather, tax audits, traffic, rain, stolen vans, spray painted vans, payroll audits, “challenging” customers, traffic, burnt rice, avocado prices, and traffic. Other than that and a hundred other bumps in the road it’s been all peaches and cream.
Please tell us about Kon-Tiki Taco.
We specialize in taco cart catering and try to keep it simple. We are known for helping client through the process of hiring a caterer for their event. It can be overwhelming and our background in full-service events allows us to offer advice in other areas unrelated to the food we bring. We are also known for our great food and staff. The on-site team is really there to make people happy. When we are able to serve a group of family or friends having a good time, it’s all worth it.
Do you look back particularly fondly on any memories from childhood?
Catching my first barrel (or tube) in the ocean.
