Hi Jim, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
My name is Jim Nguyen, CEO and co founder of Francium Chocolate Inc, and my story began in 2016 after a health scare that made me stop and truly reflect on where I was heading. I was severely overweight, and my health was declining quickly, which pushed me to take my wellness seriously and rebuild my habits from the ground up.
When I removed refined sugars and processed foods from my diet, it helped me heal, but it also made me miss the desserts I had always loved. Ice cream, cookies, candy bars, and chocolate are foods that bring people joy, yet the healthier options at the time did not deliver the same taste or experience. Out of determination, I began creating my own. After months of research, experimenting, and late night trial and error, I developed a healthier ice cream that my friends and family, and even I, genuinely enjoyed.
With the support of my longtime friend and business partner Joey Tran, we built an ice cream company called CraftBelly Delights. As the company grew, I noticed something important while developing new flavors. There was no chocolate that delivered the complete experience I believed in. I wanted chocolate that tasted exceptional, felt special, and was made with clean natural ingredients that supported a healthier low glycemic lifestyle. Nothing in the market offered all of that together.
That realization led me to study chocolate seriously. Through professional training, I discovered European and Asian craftsmanship and the artistry that makes chocolate truly extraordinary. I fell in love with the craft, and that passion became the foundation of Francium Chocolate. With that vision in place, Joey and I made the decision to start Francium Chocolate Inc together and build something that aligned with our shared values.
The name Francium came from a moment of simple curiosity. I was googling the rarest things in the world, and Francium appeared at the top of the list. It fascinated me because it is considered one of the rarest and most valuable elements on earth. That connection made sense to me, since we use some of the rarest cacao and ingredients in the world to create our chocolate. And the idea of Francium lasting only twenty two minutes gave me another insight. When chocolate is made with clean natural ingredients and tastes as good as ours does, it never lasts long. People enjoy it quickly, and that fleeting moment of happiness is exactly what I wanted to capture. That moment of discovery became the inspiration behind the name Francium Chocolate.
Francium is the reflection of my personal journey, one that began with a difficult moment but grew into a purpose I am proud of. Today, we create fine artisanal chocolates made with intention, purity, and care. Our mission is to bring joy through chocolate that tastes exceptional, feels special, and supports a more thoughtful and healthier way of enjoying life.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The journey has definitely been quite an adventure, with everything leading me exactly where I needed to be. When I first started, I had no formal background in ice cream or chocolate, so everything I learned came from curiosity, hands on experimenting, and a lot of trial and error. There were many nights when recipes failed or machines acted up, but each failure taught me something new and often led to breakthroughs I never expected. That is where I learned the true value of failing forward.
It’s become part of my creative process. Every misstep revealed something new, helped me refine an idea, or moved me one step closer to the vision I had in mind. Those small wins, even the ones hidden inside setbacks, became the building blocks of Francium Chocolate.
There were financial challenges as well. Working with clean natural ingredients and developing healthier desserts that still taste exceptional is both expensive and time consuming. It required a lot of patience, discipline, and belief in the mission.
As the company grew, learning how to scale while protecting quality became another challenge. Balancing creativity with operations, keeping up with demand, and evolving without losing the heart of what we do has all been part of the journey.
Over time, I have become accustomed to the process and learned to trust it. Every challenge helped shape the creator and the company I am becoming, and it keeps the adventure meaningful.

We specialize in low glycemic, all natural chocolates made with rare and meaningful ingredients, including premium organic Arriba Nacional cacao from Ecuador.
Arriba Nacional is an heirloom cacao treasured for its delicate floral, fruity, and nutty notes. Its original genetic lineage was once believed to be nearly lost, surviving only in small pockets of old growth trees before being rediscovered by dedicated farmers. Using this cacao allows us to honor its heritage and share a flavor experience that is both rare and deeply meaningful.

People are becoming more aware of what they put into their bodies, and they are also becoming more willing to seek out creations that offer both exceptional flavor and a cleaner ingredient profile. Over the next five to ten years, I see a major shift toward better ingredients, transparency, and a deeper appreciation for craftsmanship.
There is also a growing movement toward low glycemic and low sugar desserts that do not compromise on taste and experience. Consumers are learning that they no longer have to choose between enjoyment and wellness, and that change will continue to drive innovation in the industry. Natural sweeteners, higher quality cacao, and real fruits and spices will become the standard rather than the exception.
I also believe people are craving experiences. They want creations that tell a story, that feel intentional, and moments that bring a sense of joy and connection. Brands that focus on emotional value, authenticity, and artistry will stand out in a crowded market.
Sustainability and ethical sourcing will continue to play a major role as well. Supporting farmers, preserving heirloom cacao varieties, and choosing ingredients that respect the environment will become increasingly important to both consumers and creators.
Overall, I think the future of chocolate is moving toward a place where indulgence, wellness, and craftsmanship all live together. And that is exactly where I see Francium Chocolate thriving.
