Rising Stars: Meet Cynthia Alsop of Moorpark

Today we’d like to introduce you to Cynthia Alsop.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
We didn’t start Las Casuelas Catering with money or investors. We started it with a dream and the will to survive. Two single moms who were simply done, done with layoffs, done being overlooked, and done building other people’s dreams.

After years in corporate jobs where I was treated like a number, I knew I needed something of my own. I wanted stability, purpose, and freedom, not just for me, but for my family. Around that time, Sofia and I talked about how tired we were of giving our best to companies that could replace us overnight. That conversation changed everything. I decided to move forward and started building what would become Las Casuelas Catering.

Sofia brought the authentic flavors of Hidalgo, and I leaned into my Durango roots and my lifelong experience in catering, something I’ve done since I was fourteen. I took on the logistics, operations, planning, and everything behind the scenes to bring our vision to life. We had no capital, no staff, and no guarantees. Just heart, culture, and the determination to make something from nothing.

Las Casuelas Catering was built through pure resilience. It’s more than a business. It’s proof that when women refuse to settle, they can create something extraordinary. Every event we serve carries that story ,one of strength, heritage, and the belief that no dream is too small when it’s built from love and perseverance.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely hasn’t been a smooth road. In the beginning, we had nothing, no capital, no staff, no fancy setup. We borrowed Sofia’s brother’s truck, rented U-Hauls when we could, and sometimes packed everything into our own cars just to make it to an event. We cooked out of our kitchens, worked long nights, and did every single thing ourselves because we couldn’t afford to pay anyone to help.

Money was always tight, but the hardest part wasn’t just financial. It was the doubt. Our own families didn’t always believe in what we were trying to build. Some people helped us when we needed it most, and I’ll always be grateful for that, but even then, the doubts were still there. Some still have them. Everyone has an opinion about what you should or shouldn’t do, but when it comes time to actually step in and help, most people don’t.

It was discouraging at times, but it also made us stronger. We learned to trust ourselves and keep pushing forward no matter who believed in us. There were days we were exhausted, broke, and questioning if it was worth it, but deep down we knew it was. Every event, every happy client, every thank-you message reminded us that all the struggle was leading somewhere.

Las Casuelas Catering was built with faith, hard work, and heart. It wasn’t easy, but the journey made us who we are stronger, wiser, and more grateful for every single win.

At Las Casuelas Catering, we do everything with love, attention, and detail. We treat every event like it’s for one of our own. Our team always shows up smiling and ready to work hard because we truly care about every client we serve.

What sets us apart is the heart we put into everything we do. We go above and beyond to make sure our clients have the best experience possible from the first message to the very last plate. We pay attention to every detail because we know that those small touches are what make an event unforgettable.

Our authentic Mexican flavors bring a taste of home to every celebration. The aromas, the colors, the freshness everything we do is inspired by the feeling of being in Mexico, surrounded by good food and good company.

Is there anyone you’d like to thank or give credit to?
There are so many people who deserve credit for where we are today. First and foremost Our team deserves so much love. They show up smiling, work hard, and give their all at every single event. Whether it’s setting up, serving guests, or cleaning up at the end of a long night, they do it with pride and heart. We really are like family.

Sofia has been with me since the very beginning. Her talent, dedication, and passion for what we do have been a huge part of our success. Our families have also been there through every step. My three boys and Sofia’s children have helped in more ways than I can count. And of course, Fermina, who’s been with us since day one, helps bring our tables to life with her beautiful decorations and creative touch.

And of course, our clients the people who trust us with their special moments. Every message, where someone tells us how much they loved the food or how amazing the experience was, reminds us why we do what we do. Their support and word of mouth have been the biggest blessing.

Lastly, even the people who doubted us played a part. Their doubt gave us motivation to keep proving that two single moms with a dream can build something incredible.
