Rising Stars: Meet Paul Cassell of WOODLAND HILLS

Today we’d like to introduce you to Paul Cassell.

Hi Paul, so excited to have you with us today. What can you tell us about your story?
I have been baking and cooking my entire life. I’ve been a professional chef in Los Angeles since 2000 mostly as a private chef… Over the years more and more friends were asking me to bake for them so in 2023 I finally turned it into a full fledged business with a cottage license. I have been baking for Courteney Cox for a while and then she asked me to do an Instagram post… I was putting her off until I got my website up and my packaging together, but we finally did that and it was a lot of fun.… Throughout the second half of 2023 and into 2024 I reached out to Coffee bars and restaurants and that definitely expanded my Wholesale presence… My business is busy with both Wholesale and retail clients today.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
is there any Baking startup that has been a smooth road? It has been extremely challenging. It has been very difficult working out of my home even though I have some amazing professional equipment and more space than most. I feel very fortunate about that, but it’s just me and I have not had Anyone helping me guiding me through this. There aren’t really a lot of successful Cookie businesses that want to give out advice to someone who may be more successful than them in the future

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I bake cookies and bars… The cookies are between 3.75 ounces and 4 ounces with all natural ingredients and no preservatives… I have been been for nearly 40 years and I guess I have taken that experience for granted… But it’s extremely gratifying when people enjoying my baking so much… people tell me it’s the best I’ve ever had every single day. This is extremely gratifyingI also bake cake cakes for restaurants like aroma, coffee, and tea and alcove Cafe and Bakery in los Feliz.

What has been the most important lesson you’ve learned along your journey?
to trust your instincts to be open to learning new things all the while trusting what you know.

I literally have learned something new every single dayI have been doing this business.
