Hi Michelangelo, so excited to have you with us today. What can you tell us about your story?
The journey of LA LA Lasagna began with my passion for fresh pasta and the iconic lasagnas of my hometown, Bologna. Growing up immersed in the rich culinary traditions of my Bolognese and Neapolitan family, I dreamed of sharing these authentic Italian flavors in a way that was accessible and unforgettable. This vision inspired me to take those beloved recipes and bring them to life on a mobile platform, creating a one-of-a-kind food truck experience that brings the heart of Italy to the streets.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The journey has been anything but smooth. After all, the restaurant and food business is never a walk in the park. With decades of experience in the industry, I was well aware of the challenges I’d face. Launching the world’s first lasagna food truck came with its share of risks, from navigating complex logistics to winning over a market with a fresh take on Italian cuisine. But these challenges fueled our growth. Each obstacle pushed us to innovate, solidify our brand, and carve out a unique space in a fiercely competitive industry.

As you know, we’re big fans of LA LA Lasagna. For our readers who might not be as familiar what can you tell them about the brand?
LA LA Lasagna was born from my passion for authentic Italian cuisine and my experience as a professional chef, combined with a vision to bring the flavors of Italy to the vibrant streets of Los Angeles. Back in 2016, when food trucks were flourishing in the city, I noticed a gap, most “Italian” offerings were heavily Americanized. I wanted to break the mold and deliver something truly authentic.
With that, LA LA Lasagna became a restaurant on wheels, offering not just lasagnas but also fresh pasta, traditional Italian dishes, and desserts, all crafted from scratch using fresh, organic, and high-quality ingredients. What sets us apart is our commitment to delivering the quality of a traditional Italian restaurant, even in a mobile setting.
For me, LA LA Lasagna is more than just a food truck: it’s a culinary experience, blending tradition, innovation, and the joy of sharing great food.

While luck has its moments, I believe our success at LA LA Lasagna is rooted in something far more reliable: an unwavering commitment to quality. By staying true to my culinary roots and using only the finest ingredients, we’ve earned the trust and loyalty of our customers. This dedication has created a reputation that speaks for itself, a foundation built on passion, authenticity, and the love of great food.
