The Weekly Bite: Wild Carvery in Burbank

Today we’d like to introduce you to Burbank’s Wild Carvery.

I imagine many of your best customers don’t even know the story behind Wild Carvery – can you share some of that story with us?
I’ve always loved to cook. I love using quality ingredients and innovating on simple dishes. I felt it would be a great outlet for me creatively, and the location was too great to pass up. What started as an effort to create a small café in Burbank centered around honest ingredients, quickly turned into a much larger endeavor. We are thrilled with the success we have had, and I still enjoy the dynamic process of creating new dishes and updating our menu selections.

Every story has its ups and downs – what are some of the difficulties you’ve had to deal with over time?
I think one of our bigger challenges has been educating the public as to what is honest food and what is not. Prices can deter some, but quality costs more money. In the long run we see it as an investment in one’s health and longevity. By eating pure foods, free from harmful chemicals and preservatives, you can dramatically lessen the need for costly medical bills in the future. Besides the preventative aspect, pure ingredients just make you feel better. It’s a win-win.

The best part about independent spots, in our view, is that they are able to think outside of the box and experiment with new ideas, take risks, cater to niches, etc. How does that apply to you guys?
If I could describe our motto in one word it would be honesty. You go to restaurants and very frequently you are not sure of the origins of the ingredients. We are very transparent with what we use in our dishes, which brings a sense of trust to our customers and keeps them coming back. We buy organic whenever possible and source ingredients that are free from preservatives or GMOs. We use only non-GMO sunflower oil for grilling and frying. Our olive oil is imported from Italy and our vinegar is imported from Spain (hence, inherently GMO-free). Our fries are cut fresh, made to order and gluten-free. We use only nitrate-free bacon and pastrami, and our chicken is free from hormones or antibiotics. We grind our burgers in house daily and make all of our own dressings and sauces from scratch. We even make our own pickles and jalapenos. Our tuna contains only albacore tuna – no preservatives. We use only Kosher and sea salt – no table salt. Our bread is delivered fresh daily from La Brea bakery. We make our taco tortillas from scratch, which are served with our house made pico de gallo. Even our selection of chips are non-GMO or preservative-free.
We have just introduced a selection of breakfast wraps offered on Saturday and Sunday from 9am-12pm and use only organic eggs. Most everything on our menu can be made gluten-free by omitting croutons (in our salads) or changing the bread.
After 4pm you can select from our Appetizer menu featuring delicious small plates like our Bacon Wrapped Dates or Spicy Chicken Tacos.

The ambiance is wonderful. We have a very comfortable “lounge” dining room, 2 outdoor patios and booth seating in our main area. We feature a large selection of beers and wines, including organic and gluten-free options. We bring beauty and meaning to daily life by instilling trust in our customers and providing pure, quality ingredients. The portions are incredible. Many people will make two meals of one dish.

Choice Angus beef piled high with pastrami, nitrate-free bacon, aged cheddar, Swiss, wild arugula, tomatoes, red onions, pickles and our garlic aioli.

All Natural turkey, house-made cranjam, thinly sliced red onions, mixed greens, topped with fresh sprouts and spread with mayo on a lightly toasted ciabatta.

Southwest Chicken Sandwich

All-natural grilled chicken, nitrate-free bacon, arugula, sliced tomato, roasted bell peppers, jalapenos, pepper-jack cheese, mayo on our toasted ciabatta.

Parking Advice:
There is a city parking structure right across the street, another behind us, as well as three different structures on Orange Grove Ave. There is street parking on San Fernando Blvd and Angelo Ave as well.

Happy Hour:
We offer our “Happier Hour” – an all day every day happy hour on all of our beers and wines.

Average Entre Cost:Average cost is around $15. All entrees include a choice of side: fresh-cut fries, organic salad, cheesy potatoes or chips.
