Rising Stars: Meet Laurel Gallucci

Today we’d like to introduce you to Laurel Gallucci.

Hi Laurel, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
In 2012, I was diagnosed with an autoimmune disease called Hashimoto’s. My health began to decline over the next two years until one day, I struggled to even walk up a staircase. I decided to work with a functional medical doctor who suggested I change my diet, and I began what I call my healing through food journey. By doctor’s orders, I removed grains, refined sugar, dairy and soy from my diet and was creating food at home to nourish myself. My love for baking, which began during early childhood, continued during this time. I started to create cakes for family and friends and bring them to parties and get togethers. One day, I brought our Chocolate Caramel Cake (AKA Chocolate Cake that Changed Everything) to my friend Claire Thomas’ house. She took one bite, and them looked at me and said, “What are we doing with this!!?” She instantly knew it was special, and that was the day we started Sweet Laurel!

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
LOL. Smooth, no. Fun, exhilarating, challenging, never a dull moment – YES. I’ve grown so much along the way, and I am grateful.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I was a career educator before co-founding Sweet Laurel. I taught for five years and had my master’s degree in education. Education has always been near and dear to my heart. After my Sweet Laurel journey began, I spent the first two years as our head baker, customer service gal, delivery driver, all the hats, and as we began to grow, I moved into an operational and leadership role as we began to hire our first team members and expand the business into new avenues. My day to day as CEO of Sweet Laurel is spent running the ins and outs of the company, managing the team, leading our product and business development.

Is there something surprising that you feel even people who know you might not know about?
I am the biggest history nerd you will ever meet. I adore Los Angeles history and wrote my thesis on the topic.
