Today we’d like to introduce you to Vincent Guiheneuf.
Vincent, can you briefly walk us through your story – how you started and how you got to where you are today.
I’m a French pastry chef and owner of Bijoux macarons. I’ve been a fine dining chef for over 14 years and four years ago, I transition to focus on pastries. I’ve worked in fine dining & Michelin star in France, Australia & Ireland. I have three culinary degrees (six years of culinary education). During my time in Ireland, I discovered that I had a very passionate about Pastry. So, when I returned to France, I had an opportunity to be a private instructor, and I was helping my student getting their French Pastry Diploma. While I was working, I discovered my love for macarons for their precision & versatility. Then a year ago, I moved to Los Angeles with my wife, and we created Bijoux Macarons.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Creating a business in a different country is very difficult and is a big challenge. France and USA are very different and don’t have the same food philosophy and the same way of eating. Also, I don’t have the same quality of ingredients and need to adjust all my recipes.
Please tell us about Bijoux Macarons.
Bijoux means jewels. Macarons are considered to be the Haute couture of pastry in France. They are very delicate, require precision and a lot of know how. My macarons are different because they are well balanced (not overly sweet), have the ideal texture (crunchy on the outside with a cake-like interior with a smooth filing), and I use only fresh & quality ingredients. My macarons have unique flavor combinations that are inspired by my experience as a fine dining chef and from my home country, France.
Bijoux Macarons is a delivery business only or pick up by appointment. Our macarons are available for next day delivery / pick up. We are going to ship nationally starting late summer 2019. We specialize in luxury gifts with a premium and well design packaging.
On the weekend, I host macaron class and we are going to do macaron tasting beginning of summer. It is a great moment that I share with a small group my passion for macarons.
