Meet Trevor Olson of Austeriti – Sustainable Bar Services

Today we’d like to introduce you to Trevor Olson.

Trevor, can you briefly walk us through your story – how you started and how you got to where you are today.
In order to support ourselves when moving to Los Angeles, we both (Mohirah Hall & myself, Austeriti’s founders) found ourselves behind the bar at some of LA’s most exclusive parties. It didn’t take very long for us to realize the events sector in LA acts in gross excess. At the conclusion of events, dumpsters spilled over with single- use plastics, unwanted party favors, and copious amounts of uneaten food. Time after time witnessing this devastating action and knowing the effect it was having on our environment became too much to continue being pawns of the “machine”. 

Thus, we began our mission to create a sustainably oriented event bar service, illustrating that being eco-conscious can only bring positivity to any event. Austeriti doesn’t cut any corners when our experience working with competitors indicates differently. We think “going green” doesn’t have to break the bank while event guests & clients attain a greater sense of pride at the conclusion of their event. Specialty crafted cocktails and mocktails only taste better when created responsibly. 

Today, Austeriti is a thriving full bar service curating sustainable beverage experiences while striving for carbon neutrality through our entire operation. We recently joined 

1% for the Planet and partner with One Tree Planted (each $1 donated plants a tree) and TerraPass from a sustainability POV as well. It has also been gratifying to see the responses from event planners and corporations that are excited to partner with a company like ours. We’ve created relationships with local farms around LA to source organic ingredients for our drinks and sustainable spirit brands like Dulce Vida or Ventura Spirits to stock our well. It goes without being said that Austeriti never uses any single use plastics during their events and even composts the waste left behind at each event. 

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Starting any business has its obstacles and Austeriti is no different! In the initial stages of forming the company, we made a pledge to always try to be as zero waste as possible. This has involved conducting much research in order to learn the cocktails/mocktails “life-cycle” and how everything that goes into them has to be accounted for how it affects the environment. 

For instance, exclusively pouring brands that manufacture their spirits in a responsible way only made sense. This involved finding spirit companies big or small that either run their distillery on green energy like Quady Wines (solar, 

wind, etc.), compost their waste to be used again in their soils, are certified organic like Dulce Vida & Ventura Spirits, donates to environmental non-profits, hires local farmers, and much more. This took plenty of vetting but we’re beyond proud to have found spirit companies to partner with who embody the sustainable pursuit. Ventura Spirits finds a second life for fruits such as strawberries by taking those that can’t make it to stores shelves due to imperfections and adding them into their flavorsome Strawberry Brandy. Quady Wines has an impressive 18,000 sq ft of solar panels to help run their vineyards production and they compost wine filtering byproducts to be used again in their estates soil. This feeds into the biodynamic wine culture, which Austeriti is a big fan of! 

Other examples that took some thought and time sourcing were the basic essentials that make a bar function! We know some drinkers had to have a straw….so we again began our search for an eco-friendly substitute. We ended up finding green alternatives that are affordable and now provide stainless steel straws, bamboo, or 100% all-natural hay straws that can be composted. We opted to never use paper napkins (or compostable) and decided to invest in reusable linen napkins that offer a much classier aesthetic. Our research even pointed us in the direction of crafting our own club soda on site by using recaptured CO2 instead of buying bottles due to it reduces our carbon footprint even further! 

Lastly, with all of these eco perks that add value to any event, it’s been a slight challenge to make consumers aware that our price points aren’t any different from our competitors. Austeriti just goes the extra mile in order to make an already memorable event even greater because it makes us sleep easier at night knowing we’re doing something worthwhile. In order to combat this stigma that going green must be more expensive, we’ve curated a multitude of packages that can really fit any budget. We don’t want just a certain class of people to be able to indulge in our sustainable approach. Instead, we want to have something for everyone so at the conclusion of an event a client can feel good about having a carbon conscious bar caterer!

Not just a bar catering company, Austeriti emphasizes sustainability through organic, farm to glass and thoughtful cocktail & mocktail services in Southern California that strive to create a carbon-neutral bar at your event. By bringing attention to the impact of climate change with each delicious yet sustainable drink served, we hope to continually stimulate the larger conversation about taking personal accountability to effect positive change on our planet. We take pride in the fact that we don’t cut corners. In today’s society, sometimes marketing means using buzz 

words (sustainable, green, vegan, etc.) frivolously. That’s not us to our core. We only created this company because we believe that our actions can make a difference and that’s how we’re approaching our growth, with the goal of amplifying our impact moving forward. 

We can be sustainable all day but if the drinks don’t taste good, nobody will care. That’s why we make drinks that will be Instagrammed over and over because they’re delicious and look beautiful! Having trained with Julian Cox, Josh Goldman, and Nick Meyer of Soigne group, Mohirah has used his foundation of knowledge to bring elevated cocktail experiences to the event industry. 

WHAT WE DO/SPECIALIZE IN: 

Bar Management We staff the bar with our trained mixologists that are hospitable, happy, helpful, and eager to make your guests happy with a sustainable beverage. 

Custom Cocktail Menu Perhaps your party has a theme where you want the cocktails to match. Perhaps you have a favorite spirit that you want to explore. Whatever the case, we’ll develop a cocktail menu that suits your fancy. 

Bar Design We work with you and/or the event planner to match the bar aesthetic that meets your event needs w/o compromising our promise to practice sustainable bar operations. 

Plastic Free At no extra cost, there will never be single use plastic utilized during event operations with Austeriti. That means no single use plastic glasses, soda, juices, etc. 

Freshly Squeezed Juice and House Made Syrups Our juices are fresh-squeezed for your event and sourced from local farms and vendors. Our Syrups are made from alkalinized Kangen water to be as fresh & healthy as possible. 

Bar Rental We can bring our custom made bar to be utilized at your event for a true “bar experience”. We’d be happy to arrange that. 

Glassware Rentals Whether you rent glassware directly from us, require glassware from a rental house, or decide to have custom sustainable glassware made for your event, we work with you every step of the way to ensure that the glassware you want and need is present! 

Full Service We spare no amount of service from finding, purchasing, and bringing the spirits, wine, & beer needed for your event. We handle ice delivery, florals, etc. so you can simply enjoy your event! 

We’re most proud of being a company where our actions speak for us. Los Angeles is a perfect city for a sustainable business. Aside from connecting with other like-minded individuals who also reside here, Los Angeles is in desperate need for more green business. As each year passes, more people flock to the city’s wonderful attractions, yielding greater waste. By offering a service that mitigates unnecessary waste, we feel it positions us strongly in the marketplace. LA is open to change, which we love! 

Southern California itself is large with an incomparable number of events growing in number & scale. Operating a catering business here certainly means you won’t be short of possible work, but that also means you’ll have to find an attractive niche that sets you aside from similar competition. We’re hoping our niche as the only true sustainable bar service leads to sustained demand from both eco and non eco-focused planners, business, and individuals. We know this will only come from hard work and continuing to go above and beyond as individuals and as a company. 

Los Angeles also attracts a multitude of other businesses that provide for us the ability to be sustainable. This means we don’t have to travel too far to find organic farms, sustainable spirit distilleries, glassware rentals, and sustainable minded event planners and businesses in the city! We’re very thankful for the eco-savvy network of individuals who want to take care of this planet as much as we do.
