Today we’d like to introduce you to Thomas Walsh.
Thomas, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Underwood Ranches is a family owned grower in Ventura County since 1867. For more than 50 years we have grown peppers from bells to jalapenos and are known for being the largest pepper grower in the United States. Our history and knowledge of peppers have allowed us to grow more than 2,000 acres of red jalapenos on our ranches in Ventura, Los Angeles and Kern Counties. Through yearly taste trials of more than 50 varieties of jalapenos per year, we are able to produce the best tasting, spiciest, and highest yielding pepper crop. That intensity of flavor and quality applies to all varieties that we grow including Anaheim and Poblano peppers.
Now we have expanded our horizons by turning our peppers into products! Our recipes are free from artificial preservatives, natural, uncomplicated and made in the USA with peppers grown by Underwood Ranches in our fields in California, we truly are Seed to Sauce!!!
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Farming is always a struggle, if its not low yields due to pests, weather or disease its bad markets with product flooding in from Mexico. Farming is a gamble which is one of the many reasons we decided to turn our peppers into sauces.

Underwood Ranches is unique simply because we are truly Seed to Sauce, we grow thew peppers and we make the sauce.
What moment in your career do you look back most fondly on?
Being fortunate enough to work for the Underwood Family, and have this once in a lifetime opportunity to turn our peppers into sauces.
