Meet Sil Flores of Organic Fuel L.A. in South Bay

Today we’d like to introduce you to Sil Flores.

Sil, please share your story with us. How did you get to where you are today?
I first moved down to South Bay from Ojai, CA in 2016. I knew I wanted to start a business but just wasn’t sure how or what. At this time, I was working as an event coordinator for a well-known fitness coach here in West L.A. During a conversation about his upcoming event, I was asked to find a meal prep company that would deliver food specific to his nutritionist given macros.

During the search, I realized there wasn’t much out there that did custom meal prep. All the companies I found had preset menus, most were shipped in from other cities (and even states) and many of them were not organic.

I worked as a sous chef doing catering through Wolfgang Puck for many years. I am a firm believer that organic is best for both humans & planet and now I find myself in a city with the perfect clientele. So, I offered to give it a whirl for a week and he agreed.

It started with this fitness coach, who then referred me to some of his friends. Fast forward to 2020, and Organic Fuel L.A. is now servicing South Bay, West L.A. & the Hollywood area.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I wanted to incorporate sustainability & friendliness as much as I could. At first, I realized I was putting more emphasis on that than the actual meal prep. It was a learning step and have now found a good balance between the two.

Food waste (and plastic) are two MAJOR contributors to the waste problem we have. Finding ways around this was and continues to be a challenge. So far, we have come up with this:

– Reusable glass containers & bags
– Local deliveries only = no cardboard boxes, styrofoam or icepacks
– EV car for delivery = no added emissions
– Composting leftover foods
– Buying from local farmers markets to decrease plastic wrapping & packaging
– Buying soaps, cleaning agents supplies from local waste-free/refill shops

With all this progress, we still face a major issue: PLASTIC FOOD CONTAINERS.

Some clients simply do not want glass. It’s too heavy, fragile & needs to be washed whereas plastic can just be tossed. We have explored & tested MANY plant-based containers (corn, bamboo, sugarcane) and so far, none of these materials are meant to hold food for longer than a day and do not reheat or travel well.

This is an ongoing challenge that we are hopeful to overcome. As the world goes more green, we are positive a plant-based alternative that works will soon be available.
