Meet Sean and Amber McCarthy of Five07 Coffee Bar + Eatery

Today we’d like to introduce you to Sean and Amber McCarthy.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Both growing up in the area, we (Sean + Amber) wished that there was a social and creative space that was open into the night. It would hit 8pm, and the whole Conejo Valley shuts down. This inspiration led to a rapid build-up of ideas: craft coffee, smoothies, crepes, live music, local art, clean ingredients!

Being so young, we faced resistance in our search for funding. It took almost two years to get the required investors and a competitive loan. Once we found the right place, we completely cleared the space out and constructed our perfect setup with a combination of chairs and tables from Bean Crazy and Side Street Cafe, couple with couches and a church pew from Santa Monica. We were able to piece together our vibe with the help of so many amazing local companies, it’s truly been about community over competition. In the midst of all this planning, we also got engaged to be married!

We soft-opened January 2018 and immediately had such a beautiful community begin to blossom. The last year+ has seen us grow our team, a group of individuals always striving to be the best versions of themselves – they truly blow us away every single day, and further improve our menu and vibes. We try to become 1% better every day, whether it’s through service or business efficiency.

Has it been a smooth road?
We’ve been constantly hit with resistances, but we know that that’s part of the journey! Our biggest ones occurred before opening, with the difficulties of getting funded and then finding the right location.

We had our hearts set on a little spot with a bit patio in the back. We spent months drawing up the legal paperwork, making blueprints, and getting marketing materials ready. The day before we were prepared to sign a 5 year lease, we were made aware of the fact that anytime it rained, the entire back would flood unless we installed a $20,000+ drainage system.

That was just something we couldn’t afford, and so we had to pass on the space. We were heartbroken and crestfallen. But because of this momentary setback, our eyes were able to open to our current location – the perfect balance of indoor and outdoor seating with great neighbors and an amazing landlord team. Opening a business while also planning a wedding is absolutely crazy, but we managed to pull it together and have been loving growing our company while also strengthening our marriage every day.

We’d love to hear more about your business.
We serve as a community space first that just happens to make delicious drinks and food. Some things that set us apart are our extended hours, 7:30 am until midnight; craft coffee in a comfortable, warm seating area; clean eating at reasonable prices; and live music backed by local artists.

We are most proud of our team continuing to rise to meet the needs of a growing company. Whether it’s through operations, art curation, music coordination, recipes, or coffee sourcing, all of our moves are made by a team that is 100% between the ages of 17 and 27.

Many of us had no previous experience in the roles that we now hold, but are fueled by passions and a desire to constantly be better. Five07 is a family, and we invite the community to join us every day.

Is our city a good place to do what you do?
As far as Thousand Oaks goes, we’ve loved getting to work with the local bureaucracy to help make the city the best it can be! The most important thing when starting a business is finding a need and filling it. If there’s something that’s missing in Thousand Oaks, then we would 100% recommend starting that business here.

However, opening up shop just to start a business is what leads to the stats people will throw at you that __% of small businesses fail in the first year. It’s all about knowing your market first. From there, with enough hustle and grit, a successful organization can be started in any city.
