Meet Sandra and Edgar Ruiz of Epic Tacos in San Fernando Valley

Today we’d like to introduce you to Sandra and Edgar Ruiz.

Sandra and Edgar, please share your story with us. How did you get to where you are today?
We operate a gourmet food truck and mobile catering business. We specialized in Mexican cuisine and our homemade tortillas Tacos and three generation family recipes with our twist. Serving vegan and vegetarian options. We are known for our shrimp tacos and meat marination.

We specialize in Authentic Taco Catering, bringing you the greatest selection of meat and vegetarian entrees. We showcase our culinary delights with a clean and modern taco cart which is design for any type of social event, ranging from family gatherings, corporate events, private parties or anything in between! We are sure to provide you and your guests the highest customer service with our made-to-order tacos, incredible salsas, outstanding side dishes and delicious natural beverages.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Smooth Road? No way! First year of opening our business we endured the following life-changing obstacles.
– The passing of our father of heat failure.
– Co-Founder getting diagnosed with rare cancer Sarcoma and being used as a case study for treatment.
– One of our catering vans being stolen and televised all over L.A county…

It’s been a bumpy road all the way thru!

Proud moment was when I was asked by a client in L.A to cater their Wisconsin festival (Los Dells Music Festival) in their personal ranch for many iconic Latino music celebrities and might I add with only a five-day notice to gather all of our crew and menu options. Experience was unbelievable and the challenges was even better. Made us confident and experienced.

If you had to go back in time and start over, would you have done anything differently?
Start with a restaurant instead of a food truck. In the gourmet food truck industry, there is always food truck bookers and they charge a fee for all their food truck stops. Plus any festival we attend, we are charged a fee to vend. Sometimes up to 50% in fees.
