Today we’d like to introduce you to Paulina Lackey.
Thanks for sharing your story with us Paulina. So, let’s start at the beginning and we can move on from there.
In 2015, my husband Josh and I quit our jobs and set off to travel the world. We thought to ourselves, the time is now! The world is so big, let’s travel the world and explore while we are still young and healthy. We had just gotten married and thought what better way than to start our marriage off with a nine months honeymoon to 19 countries. Amongst all those countries, Thailand was where we first discovered rolled ice cream. We fell in love with Thailand and its culture and of course the street food. We are foodies at heart. Every night, we would find a different night market to roam.
We stumbled upon a makeshift cart with a generator attached to it in the middle of the night market and saw a man using two metal paddles churning ice cream on a cold metal slab. We had never seen anything like this before! When we got back to our hotel, we did some research and to our surprise, no one in Orange County was making this type of ice cream yet. So, Josh and I asked each other these questions “what if we didn’t go back to our boring jobs? What if we opened up an ice cream shop instead?”. We didn’t want to go back to our boing 9-5 jobs. Instead, we wanted to create a space where people could gather and experience ice cream being made right before their eyes.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
The road to entrepreneurship for us had been nothing but easy but well worth it. We had no experience in opening up a shop let alone the funding to do so. We worked hard to convince someone to lease to us and to convince them that our idea was going to be nothing short of successful. It took us a whole year to find a spot to lease and during that year, we purchased a rolled ice cream machine. We practiced making ice cream in our parent’s living room with whom we were living with at the time. The research and development of our menu and flavors took us a whole year. We wanted our ice cream not only to look appealing but, to also taste premium.
Alright – so let’s talk business. Tell us about Rollin’ Creamery – what should we know?
We are the first to open Thai style rolled ice cream in Orange County. Aside from our ice cream looking aesthetic, we created flavors that would appeal to our community as well as use premium ingredients to keep our customers satisfied and coming back for more.
