Meet Kourtney Rojas of With Love, From Scratch in Anaheim

Today we’d like to introduce you to Kourtney Rojas.

Kourtney, can you briefly walk us through your story – how you started and how you got to where you are today.
I started baking pies in the summer of 2011. My childhood friend was getting married and she knew that I was a self-taught baker. She asked me if I knew of a place she could get whole pies for her wedding. I researched Orange County and all I came up with were chains like Coco’s and Marie Calendar’s. Don’t get me wrong, I grew up on those pies and to this day love the Double Cream Lemon from Marie Calendar’s.

I knew my friend was looking for something rustic and less cookie cutter. So I offered to bake the pies for her. After the wedding I had thoughts of selling pies at Farmers Markets and all sorts of grandiose ideas. It didn’t take off that way though. That Thanksgiving, I sold a few pies to friends and family. I kept working my day job and from time to time, a friend or family member would ask me to bake pies for their celebrations and I would remember how much I loved it. It wasn’t until summer of 2018 that things started to accelerate. I entered the All American Pie Contest at the LA County fair and won two red ribbons. I think that gave me some validation that I was unknowingly looking for. Someone besides a family member or friend was telling me my pies were amazing. In April of 2019, I obtained my Cottage Food Permit and in May joined Instagram. The rest really is history.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
I wouldn’t say it has been a bumpy road, but maybe a windy one? The biggest struggle is balancing being a wife, a mother of two, and an employee (still have that day job). There are days where baking in my own home kitchen is a dream. I get to roll out dough and watch my kids play out on the patio. Then there are also days when I’m in the middle of peeling apples and filling orders and my kids need me. That’s the biggest struggle. Being in the same room with them and trying to explain to them I’m working. I’ve learned to wake up early (like a baker lol) and get the bulk of my work done before they are up.

Please tell us about With Love, From Scratch.
With Love, From Scratch specializes in fresh seasonal baked pies. We are a Licensed Cottage Food Bakery which allows us to bake from home and sale direct and wholesale. We use only fresh seasonal fruit and an all butter crust. I am proud that my husband and I are making it work. I am proud my kids get to be part of our business. I love our community and the people that I have met through the building of this business are truly incredible!

If you had to go back in time and start over, would you have done anything differently?
Everything has been so organic and a slow process. It has all happened exactly as it is supposed to. I am learning to say No. I have taken on too much at times and am learning to set boundaries. I remember early on someone asked for a Huckleberry pie and there I was researching how to get Huckleberries for one pie! The shippings costs alone to get huckleberries from the Pacific Northwest were higher than the price of a whole pie.
