Meet Katie Kildow and Arlene Roldan of The Mermaid

Today we’d like to introduce you to Katie Kildow and Arlene Roldan.

Arelene Roldan and Katie Kildow met a year and a half ago through a mutual friend.

Previously, Arelene had owned Bar One taproom in North Hollywood for ten years, as well as a cafe next door called Steampunk. Katie is a part owner in Lemon Poppy Kitchen in Glassell Park and has been honing her bar skills the last 13 years in Milwaukee and Los Angeles.

Both Arelene and Katie had dreamed of opening a neighborhood spot, harkening back to the corner bars of Katie’s youth in MKE, and Arelene’s youth in LBC. We launched The Mermaid in August of 2018. The Mermaid is a fun, casual spot, great for a pop-in after work or weekend meetup with pals.

Our cocktails are made with housemade mixers, infused syrups and some of our favorite spirits we’ve enjoyed over the years. We’ve also created a playful menu that’s creative yet nostalgic at the same time, which adds to the overall vintage, nautical theme we’re created.

Has it been a smooth road?
We are backed by a wonderful group of friends and family who rallied behind us to get this dream off the ground. They helped with everything from advice and expertise to financing. It really does take a village.

The road to opening a bar in Los Angeles is never smoothly paved, and the biggest struggle for us is getting the word out there that we exist!

We are located in a small plaza in Little Tokyo, DTLA, and if you’re not sure where we are- you might miss us! There is so much fierce competition in drinking and dining options in Little Tokyo, we are surrounded by some really incredible businesses.

We’d love to hear more about your business.
First and foremost, we look to The Mermaid to be a comfortable and homey spot. A place where you can unwind from the day to day downtown grind, and just relax. We have an underwater nautical theme happening throughout, and our menu reflects twists on classic and tropical cocktails.

We also always work to support fellow women in the industry. Any given night of the week, we will have spirits, beers or cocktails on display that women had a hand in crafting. We also partner with small non-profits and spirits companies each month and put a “cocktail for a cause” drink on our menu.

 

Is our city a good place to do what you do?
At The Mermaid, we define success on how well we treat our team and our customers. We want to make sure everyone is treated with exceptional care and respect. Treating people with kindness and dignity is always a win for us.

We also find success in doing what makes us happy – whether it be making delicious and creative cocktails or serving food that we are excited about. Our success is seen in the small day-to-day interactions we have every day with our guests who walk in the doors.
