Meet Gianluca Zago of Saor Project in Los Angeles

Today we’d like to introduce you to Gianluca Zago.

Gianluca, can you briefly walk us through your story – how you started and how you got to where you are today.
My story begins in Italy when I decided a long time ago to start classical studies (as we call in Italy). In high school, I studied Latin and ancient Greek and this has allowed me to discover and appreciate art, literature and the great world of communication. At the college, I decided to continue this path and I got a marketing degree and a good number of training courses especially in online marketing. I have ever worked since I was in college and I paid my studies creating websites and sometimes working like a waiter.

After University I always worked in marketing as Product Manager first, and then like marketing consultant, for different companies but after many years I lost a bit ‘of enthusiasm in the daily routine of a small town in the north east of Italy where I used to live, so I decided with my wife Alessandra Manias to try this new adventure in the land of opportunities.

Has it been a smooth road?
We left a very good life in Italy, so at the beginning, three years ago wasn’t easy.

In 2014, we start our adventure with a bad experience due to a dishonest person and after a year of investments in a company we lost a lot of money and time; for this reasons we start from scratch a second time, but the good news was that during that period we met Christian Simionato, an incredible talented Italian Chef that worked all around the world before move to LA and this was the seeds for the birth of Saor Project!

So, as you know, we’re impressed with Saor Project – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
Our project was born from the combination of our passions for culture, food and spending nice time together, as we usually do in Italy, so in January 2016 I decide with Alessandra and Cristian to create private dinners mixing our skills, starting from the consideration that the real Italian traditions are based on a peasant culture and poor food that now is becoming very hard to find with the introduction of modern commodities. We cook dishes from a variety of Italian regions with an extensive and sophisticated knowledge of northeastern dishes. Through private dinners, events and our blog, we try to preserve and explain Italian dishes and traditions that are slowly disappearing but are very important to preserve. We provide everything from food to equipment, we set the table, serve, explain the dishes and the stories of traditional food of each Italian region… the guests need only to call us and enjoy not only good food, but a real experience.

Our duties are:
Christian (Chef): In charge to find ancient Italian recipes, find fresh and healthy food, create menus and cook it as only he can do!

Gianluca (Marketing/Sales): In charge to keep the Project focused on our goal and new opportunities and study and realize whatever is behind the promotion and a computer.

Alessandra (marketing/design): In charge to conceive a special atmosphere, creating a comfortable environment where people feel comfortable and perceive the warmth of Italian hospitality.

Let’s touch on your thoughts about our city – what do you like the most and least?
We are very different from the restaurants because we don’t have to respond to the logic of sales. We decide and offer menus that change every time using fresh and quality products only that we find in Farmers market. We have a genuine passion sharing our knowledge and we appreciate when the customers feel our passion eating for example gelato homemade, or when we see them happy to hear about the story of the “Insalata del Doge” recipe that we are explaining. Our dinners are something really unique in LA!
