Today we’d like to introduce you to Anthony and Ghia Florendo-Pascua.
Anthony and Ghia, can you briefly walk us through your story – how you started and how you got to where you are today.
iKneadTacos was established three years ago while my wife, Ghia, and I worked at Stacked restaurant in Torrance, CA. She was a bartender and I was one of the main cooks. Both of us are big-time foodies and found the struggle to be so REAL to find places that are gluten-free and accommodating my wife’s numerous allergy restrictions.
Then we thought of how many other individuals struggle with such a limited variety of “safe” foods. Whether the dietary restrictions consisted of food allergies, vegetarian diet and vegan needs. The only solution we found is to cook straight from scratch starting with ingredients that are the most natural and organic to limit any possible cross contaminants or allergy triggers. Being that iKneadTacos is based out of southern California, our cuisine is rooted from our different Asian backgrounds fused with Latin American cuisine that we grew up eating. We are able to provide a variety of fusion entrees that are complemented by a wide selection of side dishes. Our catering company strives on meeting the guests’ dietary needs and accommodations to enjoy every last bite. In addition to the tasty menu, we also provide a casual food buffet display to a seven-course sit down plated option. Food is essential to life… So we make it good.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Much like life, starting this business has not been smooth. We struggled with everything from A to Z. From keeping up to researching different substitutes of ingredients to getting our name out there by word of mouth or social media. Keeping up with social media, we found the most difficult because we are both busy with work, family and life that we would forget to post or even log on. Our nine year old daughter would remind us to “log on” or “check in” to our iKneadTacos Instagram account. Equally as challenging was making the food. At times we felt the food would have the butterfly effect. We would change or alter one ingredient or measurement and boom… We would have to change everything else in the recipe. But after 3 or 4 plates later and six dishwashing cycles, we found the perfect recipe.
iKnead Tacos – what should we know? What do you guys do best? What sets you apart from the competition?
iKneadTacos is an Asian/ Latin American fusion cuisine catering company. We specialize in providing menu items to meet dietary restrictions, gluten-free, allergy needs, vegetarian and vegan diets. iKneadTacos is known for Asian fusion proteins as well as our hand-pressed blue and white corn tortillas. We are most proud of being able to uphold the integrity of allergy-friendly catering company. iKneadTacos sets itself apart solely on the basis of always leaving the guest feeling full and their allergies feeling safe.
What is “success” or “successful” for you?
We personally define success with how we have dealt with past failures. Success is not measured by how many followers or clients you have. We feel that success is measured by how many of your clients become returning clients. iKneadTacos strives for being accommodating not only to the allergies but to the wallet. We are a catering company who believes in uplifting others.
