Life & Work with Vanessa Silva

Today we’d like to introduce you to Vanessa Silva.

Hi Vanessa, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
We were both working in a hotel and one day while just talking and throwing ideas around for a side hustle, he had done pop ups before and I had always wanted to open up my own restaurant so that’s where us starting up our own thing came about. At first, it was just for fun, to see people’s reaction after trying the food and honestly the more we’d see their faces just light up we kept going. It hasn’t been easy you know, trying to juggle two toddlers at the time, work, and our personal lives really but somehow we’ve managed. After three years of doing this and having to have met so many great people along the way, we decided to do this full time.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Has it been a smooth road?? No, haha. When we started, we had two toddlers, since then we’ve added another member to our family. We have a 1.5 yr, 5 & 6 yr old. Just like another parent working hard to give their children “the best” we feel guilty when it comes to long work weeks. We have overcame different obstacles that should probably have made us stop but it made us want this more. We’ve sacrificed a lot of family time, but when we do have a moment to step back in best believe we do.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I’ve been in the industry for about ten years now, am I the best? No. Do I know everything there is to know? No, but I continue to learn and that’s what I love about this industry, you’re always learning something new or trying different ways that may be easier/better. Alejandro loves to think out of the box, his creativity is something that admire so much, as to myself I love to cook home food but that’s where we complement each other when it comes to cooking together. We specialize in modern Mexican food, I guess you can say? We take different ingredients from other cultures and infuse them with our food.

I think what sets us apart is that we’re not afraid of making something different, not only that we put love into our food, we don’t just make it just to make it you know?

When people who have tried our food get this nostalgic moment after taking a bite, that’s my most proudest moment. Being able to take someone back to their childhood and just enjoying every single bite, it’s truly amazing.

Can you talk to us a bit about the role of luck?
Being Leads or Sous Chefs in different restaurants we’ve worked in has definitely come in handy. Starting out as a woman in the kitchen and being like “thrown into the lions den” to see if I could “handle it” has made me stronger mentally and as a cook. Alejandro has been in different situations where he had to run a restaurant as well and we feel that those roles have prepared us to where we are now.
