Exploring Life & Business with Konstantinos Katsaros of Calamaki

Today we’d like to introduce you to Konstantinos Katsaros.

Konstantinos, we appreciate you taking the time to share your story with us today. Where does your story begin?
I started Calamaki back in the summer of 2019. My first market was the Altadena Farmers Market. The idea was to prepare Greek-inspired charcoal-grilled skewers using local ingredients. I wanted to provide to the local community with something different. That’s why I chose to include octopus, local wild-caught fish and vegetables on the menu, not just chicken and pork. People liked my food and that gave me the energy to move forward. I added more markets, organized catering and participated in food festivals and events. Then COVID-19 came and everything stopped.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
When COVID-19 came into our lives, everything changed rapidly. At that time, I was participating in three different farmer’s markets. Then we heard that we were not allowed to sell food at the markets. No more events. No catering opportunities. In order to continue, I had to adjust my business plan. It was really hard but thanks to my family, friends, fellow vendors and organizations like SEE – LA, I was able to survive and move forward.

As you know, we’re big fans of Calamaki. For our readers who might not be as familiar what can you tell them about the brand?
Calamaki is famous for the charcoal-grilled skewers and rotisserie meats. But when COVID-19 came, I had to adjust to the new reality. So now at the markets, I offer salads and side dishes from the Greek cuisine. Calamaki grilled skewers are only available through our catering services. On our menu, you can find greek classic dishes like marinated octopus, spanakopita, fasolada (bean stew), a fishermen stew called Kakaviá and many more. Proudly, I source all the vegetables from local farmers, all seafood is wild and sustainably caught. Also, everything is made from scratch and this is something that people appreciate. Calamaki offers lots of vegetarian and vegan options. I believe that food should be tasty but healthy too, my philosophy is keep it simple and let the product shine. We are really lucky, here in California, to have so many amazing products year round. Big thanks to our farmers and fishermen for all of their hard work.

Can you share something surprising about yourself?
Before moving to Los Angeles, Kostas lived in Amsterdam for 18 years. That was where he met his wife. Before long, Kostas made Los Angeles his new home and started a family here.
