Conversations with Alex & Elvia Garcia

Today we’d like to introduce you to Alex & Elvia Garcia. Them and their team share their story with us below:

Evil Cooks was born in December 2016. It started up as a t-shirt company made by cooks for cooks. Alex and Elvia have over three decades combined in the food industry and after many attempts from their customers, they finally decided to start catering in 2018. Alex quit his job from one day to the next and it although it took Elvia a full year to quit, she conquered her fear and decided to go in 100% in 2019. In 2019 Evil Cooks finally got their break and got recognized for their Flan Taco. Since then, they started doing bigger events such as concerts, festivals, smorgasburg. March 2020 came and the pandemic hit. Evil cooks took a two months break and decided to regroup and really think about what was the next step. We decided to start selling homemade jam and moles and surprisingly, we got a good response from the customers. May 2020, we decided to pop up right in front of our house and it instantly became a hit.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
We did not have a smooth beginning. We started with no savings and borrowed equipment from some of our amazing friends. A few times, there were nights where we only sold $16 dollars and we would always rethink and consider going back to work but we never lost sight of or dreams. We kept pushing and asking around for us to pop up at different locations and 80% of the time, we were declined because we weren’t known.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
Evil Cooks specializes in new/traditional Mexican cuisine that has been around in Mexico for centuries but are unknown in the states. We are known for our black octopus tromp, our black pastor tromp and our dessert tacos. Our dessert taco and our latest item the cheeseburger taco has been what sets us apart from other taqueros.

El Vendedor mas grande del mundo has a been a book that has helped us move forward with our dreams as well as your obvious, Anthony Bourdain, Enrique Olvera and Roberto Solis.
